開始拳 "open start kungfu" in this case refers to the opening or start of one's kung fu.
This can refer to the start or very beginning of one's kung fu practice in general and it can also refer to the opening of one's kung fu practice of the day.
開始拳 can also refer to the start of Siu Nim Tau, a gesture that symbolizes a greeting or an opening of the form.
In Siu Nim Tau, this means to begin with feet together, arms down by the sides, finding a rhythm of breathing and relaxing. Then, with palms up and arms straight, lifting arms in front of you, until the finger tips reach eye level and inner sides of the hands meet in the center in front of you. The fingertips point to a spot on the wall in front of you where your eyes will lock and stay to find focus and relaxation.
